Seton’s takes inspiration from the Seton family, whose connection with Meldrum estate began in the 15th century. The estate entered the family through the marriage of Elizabeth Meldrum and William Seton, with ownership continuing across seven generations before later transferring to the Urquhart family.

The new restaurant aims to connect this historic identity with modern Scottish hospitality. Located within the 240-acre Meldrum House estate, Seton’s will combine heritage, landscape and locally sourced ingredients to create a dining experience focused on the character of Aberdeenshire.

Meldrum House is part of Monogram Collective, a hospitality group that also includes Pine Trees in Pitlochry and The Vineyard in Berkshire. Each property within the collection is developed around its own surroundings, history and local identity.

His previous career includes roles at Monachyle Mhor in Perthshire, Château La Chaire in Jersey and The Europe Hotel & Resort in Ireland. He has also gained experience working with established hospitality names including The Grove and Hawkyns under chef Atul Kochhar.

His approach centres on allowing high-quality ingredients to define each dish. His connection with rural landscapes and farming communities is expected to influence the restaurant’s focus on local Scottish produce.

Scade will provide wider culinary direction across Monogram Collective’s properties. His background includes training at The Ritz London under John Williams MBE, as well as experience at Langan’s Coq D’Or and with chef Martin Blunos.
