This exclusive offering features the exquisite flavor of vanilla sourced from Madagascar, infusing both sweet and savory treats with a comforting warmth and joy, resulting in a truly magical experience.

In the quest for this enchanting ingredient, Four Seasons Hotel Macao has forged a partnership with Prova Gourmet, a respected supplier of organic and sustainable vanilla. Through longstanding relationships with trusted producers, they ensure the highest quality vanilla. This commitment aligns with Four Seasons Hotels and Resorts’ shared vision to preserve and regenerate the beautiful places they operate in, leaving a positive and enduring impact on the planet.

Crafted with meticulous effort by Chef Tristan Rousselot from Prova Gourmet and Executive Pastry Chef Kaori Scott of Four Seasons Hotel Macao, the Winter Afternoon Tea menu boasts highlights such as Chef Tristan’s Religieuse. This classic pastry infused with Tahitian vanilla features a whipped ganache that beautifully contrasts the power and bitterness of sesame, embodying the elegance and flavor of the Christmas season.

Another standout dessert is the Christmas Tree, a modern reinterpretation of the traditional symbol. Combining Christmas spice biscuit with cardamom mousse and coffee ganache, Chef Tristan brings a refreshing twist that captivates both the palate and the eye, showcasing the vibrant strength of Colombian coffee and the floral notes of green cardamom.

Chef Kaori’s Canelé is a unique creation, featuring a toasted vanilla bean-infused rum custard and caramelized crust. With a crispy exterior and velvety interior, this dessert plays with the smokiness of caramelized aroma and honey soaked in the essence of vanilla, resulting in an irresistible and mysterious delight.

For those with a penchant for savory delights, the Molten Lava Cheese Tart brings together sumptuous vanilla brie cheese and mulled apple compote. The softness of Brie cheese complements the hint of acidity from the mulled apple, creating a heavenly pairing that will leave taste buds yearning for more.
