Four Seasons Resort Dubai at Jumeirah Beach has introduced a special collaboration for Emirati Women’s Day, bringing together literary expression and culinary craftsmanship to honour Emirati women. Developed in partnership with the Emirates Literature Foundation, the initiative combines the creative vision of Dr Afra Atiq and Senior Executive Pastry Chef Nicolas Lambert.
The collaboration has been inspired by the theme “We Emerge Stronger and Better”, focusing on the strength, resilience and enduring spirit represented by Emirati women. The project demonstrates how luxury hospitality can extend beyond traditional guest experiences by incorporating heritage, storytelling and regional identity into memorable moments. By connecting poetry and pâtisserie, Four Seasons Resort Dubai at Jumeirah Beach has created an experience where food becomes a medium for cultural appreciation.
The creative partnership was developed around the shared meanings found within carefully chosen ingredients. Each element used in the dessert carries symbolic value, allowing the pastry and poem to reflect themes of growth, imagination, possibility and resilience.
The poem and dessert were created together, with each influencing the other’s design and expression. The vibrant mango colour palette inspired references to light, colour, bloom and harvest within the poem, while the dessert’s circular structure was represented through repetition in the literary composition.
The poem’s ending returning to its beginning was designed as a reflection of continuity and the legacy passed between generations of Emirati women. This connection between form and meaning created a deeper relationship between the culinary creation and the written artwork.
The three main visual elements of the dessert were also represented through Arabic triplets within the poem’s structure. Mango slices, resembling pages of a book, inspired references to stories and chapters, further strengthening the connection between heritage, hospitality and artistic storytelling.
Senior Executive Pastry Chef Nicolas Lambert translated the inspiration behind the poem into a bespoke dessert designed to bring the story from the page to the table. The creation reflects the cultural symbolism behind the ingredients while presenting them through a refined hospitality experience.
The dessert combines sweet Alfonso mango with the deep roasted character of coffee, the warmth of cardamom, the texture of cocoa nibs and a finishing touch of Dibba Bay Sea Salt. Together, these ingredients create a balanced creation that represents the themes explored through the collaboration.
The pastry has been designed not only as a culinary offering but also as an expression of heritage. Every ingredient contributes to the wider story behind the dessert, allowing guests to experience the connection between Emirati traditions and contemporary hospitality.
Chef Nicolas Lambert highlighted that the most inspiring aspect of the collaboration was understanding the meaning behind each ingredient and transforming those stories into pastry. The creative process focused on representing what the ingredients symbolised rather than simply using them as components.
The special pastry experience has been made available from Friday, 28 August 2026, at Shai Salon within Four Seasons Resort Dubai at Jumeirah Beach. It will be served from the main vitrine between 11:00 am and 11:00 pm throughout the month-long Emirati Women’s Day celebrations.
A dedicated story displayed alongside the creation allows guests to understand the inspiration behind the dessert and its connection with Dr Afra Atiq’s original poem. This approach provides visitors with a complete cultural experience where taste, literature and heritage are presented together.
