Second Course: Ahi Carpaccio

The second creation combines smoked ahi tuna, charred hearts of palm, sea asparagus salsa verde, Taggiasca olives, caper berries and Ho Farms radishes. The dish will be paired with Domaine Fontsainte “Gris de Gris” Corbières from Languedoc.

Third Course: Maldera Buffalo Mozzarella With Mezzaluna Ravioli

This course features artichokes, Lion’s Mane mushrooms, 36-month white cow Modenese cheese and black winter truffle. It will be paired with Louis Jadot Meursault.

Fourth Course: Porcini-Crusted Snake River Farms Filet Mignon

The main course combines filet mignon with delicata squash, Kupu Farms micro cress, kabocha squash purée, porcini, foie gras emulsion and Marsala veal jus. The wine pairing includes Col d’Orcia Brunello di Montalcino DOCG.

Dessert: Pavlova

The final course features whipped La’ie vanilla panna cotta, roasted strawberries, lilikoi curd and white chocolate dust. The dessert will be paired with Saracco Moscato d’Asti.
